How to make Brazilian passion fruit mousse

Ingredients

  • 2 boxes of sweetened condensed milk (395 g each);
  • 2 boxes of heavy cream (200 g each);
  • 400 ml of passion fruit juice (can be made with the fruit, frozen or concentrated pulp)
  • 1 passion fruit for the syrup
  • ½ cup sugar
  • ½ cup water.

Instructions

The preparation is simple, but needs to be divided into two steps:

Mousse:

  1. If you are going to use the fruit in the recipe, you will need to: open the passion fruit, remove the pulp (with the seeds), put it in the blender, add a little water and blend for 2 minutes. Then, sieve the pulp and reserve only the juice;
  2. Place the 2 boxes of condensed milk, 1 box of heavy cream, and the passion fruit juice in a clean blender;
  3. Blend for 3 minutes and then add the other box of heavy cream;
  4. Blend for 1 minute more, then pour into a bowl and refrigerate for 3 hours.

Syrup/Glaze for garnish:

  1. After the dessert being in the refrigerator for 3 hours, open the passion fruit, remove the pulp and place in a pan;
  2. Add the sugar and water and heat over medium heat;
  3. Keep stirring constantly until the syrup is creamy (about 5 minutes);
  4. Finally, let it cool, pour it over the mousse, and enjoy your dessert!

Tips for making a perfect passion fruit mousse

As you can see, making a Brazilian passion fruit mousse is simple and fast. But we have separated some special tips for you not to miss the dessert and make it even more delicious. Find out below!

  • If you can, use a fresh fruit in the recipe;
  • To choose good passion fruits, opt for those that are slightly wrinkled and with a deep yellow or purple color, depending on the variation available in your region;
  • The condensed milk can make the mousse very sweet. So, if you want it more sour, you can put more heavy cream or not put the syrup at all;
  • Let it beat at the recommended time (4 minutes for the mousse and 5 minutes for the syrup). It is essential for the dessert to be light and creamy;
  • Unflavored gelatin makes the mousse more consistent. So, if you prefer, you can add an envelope of 12 g dissolved in water;
  • If you want a more sour dessert, use more passion fruit pulp;
  • Avoid consuming the dessert warm. Respect the time in the refrigerator.

Where the passion fruit mousse came from

The mousse originally appeared in France, in the 20th century. Since then, several adaptations, including flavor adaptations, have been made. However, there is no record of who created the passion fruit version.

Brazil is one of the few countries that produce passion fruit and it is the place where the dessert is very popular. Therefore, the passion fruit mousse is a typical Brazilian dessert.

The truth is that it is not possible to trace its origin. So, nothing fairer than to attribute the mousse to the Brazilians, who love its flavor and usually make the most of it.
